XP
Experience Points are earned as you do certain tasks and fulfill goals in the game. Buying decorations will earn you XP equal to half the price of the item while habitats will earn XP for every DC spent. Growing food and feeding it to your dragons also earns XP. One of the main differences to DV1 is that you do not receive XP for breeding dragons.
As you accrue XP you level up in the game. Below is the XP required to advance a level and what is released as you do.
Dragon Cash
At the beginning of the game you can only hold 10,000. It will not let you collect more than that from a habitat, not that it's particularly a problem at the early levels as you are pretty much spending it as fast as you can earn it on food, clearing obstacles and sending dragons on gathering missions. However eventually you get to a point where a 10,000 limit is ... well ... limiting. Hopefully that's not much before Level 7, because that's when you can buy Golden Talon Bank & Trust. Initially this building increases your max to 25,000 and upgrades are available at future levels.
Gems
The premium currency in the game, it is used for speeding up anything that takes time and for buying premium content and upgrades. It is earned through completing goals and achievements, a baby tiger that wanders your park gifts you one every day, and you have 3 you can gift to friends. There is also a Video Peddler, who advertises other games, and you earn between 10 and 25 gems for watching the video. It does feel a bit cheap and tacky, but you can certainly earn a lot of gems in a relatively short time period that way. They have lowered the value of them in the game a little bit, so that more are required to do certain things (e.g. the first Hatchery update is 100 to add a second slot and the Epic Breeding Cave is 700.) On the other hand a lot of dragons have their purchase prices set at around 20. They still only let you gift 3, before you purchase the Dragons Gifting Tree, so I guess they are trying to make the game more even for those with few gifting friends. Anyway a table of premium cost is below.
Oh, and be careful about hitting buttons that have "Speed Up" on them as they don't always prompt you to make sure you want to spend them. You might want to click on the incubating egg to see how long it has to go to discover you inadvertently spent the gems to finish the process.

Pantry
Your can only store 30 food in your pantry when you start a new park. That is 30 of the various types of food, so 30 dragonsnaps (each worth 4 XP so a total of 120), 30 dragon root (each worth 16 XP for a total of 480) or a combination of the two. As your dragons go gathering in the locations you bring back exotic food which also eats into your total (so if your dragon gathers a Pumpermelon from the Brightleaf Jungle you have 29 spots left). Every thing you gather gets stored in your pantry and can be fed to your dragons to level them up. The exotic things can give your dragons new dragon breath, give you bonuses for earning or discounts on your breedings times (eg Seed Water gives you 192 XP and decreases breeding times by 5% for two hours). However, you need to gather combinations of things to fill orders for the NPCs and to cast Spells on your dragons and affect a permanent change. (Spells can be manually deleted from a dragon, but otherwise they remain in affect in perpetuity.) So 10 dragon snaps + 3 Seed Water allows you to cast the Tattered Seed Script spell on a dragon to permanently decrease it's breeding time by 5%. Whilst you're gathering those elements (and trying to remember not to accidentally feed them to a dragon) you are losing available spots in your pantry. Luckily your pantry is available to upgrade for gems.
