Here's a recipe from The Poor College Student Kitchen! Its super fast and cheap to make (both pluses for me!)
BBQ Quesadillas
Ingredients: shredded cheese of your choice (I like a mix of Mexican 4 cheese blend & jepper jack) 2 tortillas BBQ sauce of your choice butter
1. Butter one side of a tortilla, put it in your pan (butter side down) 2. Pour desired amount of BBQ sauce on the tortilla in the pan. Spread it around so its even 3. Load on your cheese 4. Butter one side of your other tortilla and put it on top of your pile of deliciousness (butter side up this time) 5. Cook on medium-high heat until the tortillas are a crispy brown
If you have any leftover chicken, you can throw that in too, but its pretty amazing even without the meat.
We don't measure much in the Poor College Student Kitchen. Its time consuming. Haha. If it looks right and tastes right, then it is!!
I add pineapple, jalapeño, and cilantro with the chicken to mine. Las time I didn't have any pineapple so I used canned mandarin and apple slices. Was very good and I'm not a poor college student. (However I am helping to support one).

But you guys leave out the BBQ sauce!! That's the best part!!
2 cups shredded cheddar cheese 1 cup flower 1/2 cup butter
Mix until a stiff dough
Take quater size spheres, flatten the, and wrap around a green olive.
Bake at 350 until golden brown. Maybe 20 min.
Options, instead of green olive jalapeño, or other peppers.. You can even make them poppers by putting cream cheese with the jalapeño. Pretty much put whatever you want in the middle that goes with cheese and it is yummy.
Thinking it is time to make some chili again. I make a crock pot full if it, and my husband and I can eat it for several meals. It's great left overs for lunch at work.
A friend just gave me this recipe! I haven't tried it yet but..... You made Chilli!!!! Lol
Remember I never measure either but about this for 3 people:
1.5 cups self raising flour 1.5 cups milk 1 cup cornmeal (we also call it polenta (Italian name) here, a quite coarse yellow flour) 2 eggs 1/2 cup of a grated tasty cheese like cheddar but Edam is actually really nice (we use maybe 1/4 cup Parmesan or Romano instead because we are on a diet, but then you need a little more milk) 1/4 cup finely diced frozen corn I scallion (spring onion here) again diced fine Some finely diced red chilli to taste A bit of paprika and a dash of freshly ground pepper A fresh herb. Parsley, oregano or thyme are all good
Soak the corn meal in the milk for 20 mins Mix everything else in Put in a shallow greased baking dish and cook for 30 mins or so until ready at 350 F.
Voila! Good with chilli con carne or chilli beans or anything like that.

PAKE! Fresh cranberries are available so it is time once again for PAKE! Try this, you will be hooked!
Cranberry Pake (Pie+Cake)
Crust: Prepare your favorite pie crust to fit a 9-inch pie pan. Place in pan, flute edges, and leave unbaked.
Cranberry Layer: 2 cups fresh whole cranberries, rinsed and drained ** ½ cup sugar ½ cup chopped pecans Mix all ingredients and place in unbaked crust.
Cake Layer: ¾ cup softened butter 1 cup sugar 2 eggs 1 cup flour Cream together butter and sugar. Add eggs and beat well. Add flour and mix thoroughly. Dollop the mixture by spoonfuls over the cranberry layer and smooth the top with a spatula.
Place the pake on a baking sheet to catch drips while baking. Bake for 1 hour at 350 degrees or until the top is golden brown. Serve warm or at room temperature with ice cream.
**My friend uses the whole package of cranberries, I use about 3 cups.

I have been making this recipe for years after hearing about it on that radio show and until you mentioned the other fillings I had never thought about it. So I Googled Pake and sure enough there are a bunch of recipes out there. When my Meyer Lemon trees give me oodles of lemons, I'm going to try Meyer Lemon Pake!
Of course, Pake must be a variety of that classic pie/cake combo that is Bakewell tart....
Had not heard of Bakewell tart so I just Googled it. Lots of great recipes online. I recently quit coffee and now drink tea and these tarts would make a great pairing.
Love orange with cranberry, so it should be quite tasty.
Was thinking how good a pake would be using spice cake with an apple pie filling.
Quit giving me ideas! Before I only enjoyed Pake when cranberries were in season, now when I see my apple trees in full bloom all I will think about is baking!
