Has anybody paid attention to when the doubles have started previously? I don't want to waste any berries, but if there aren't going to be any doubles I'd rather collect now.

There has to be a double event - they always do two of them, and they always end the event on one.
Despite lots of Snowflake+Snowflake breeding, I still don't have a single type 3 or type 4. Do I need to sweat it, since I have lots of 1s and 2s? I can continue to breed for 3 and 4 after the conclusion of the event, right?

Nobody knows that. But it seems that we will get an extension of the BEB (-> Facebook), so you dont have to get them till the end of the Event

It took me 35 tries to get my first type 4, then I got a DR fail. I still don't have a type 3. I hope we can breed for them after the event. It will still be winter...

It's a mystery till the event ends, myke. But I think it's highly likely that we can breed 3 and 4 after the event, since we can see that lots of players haven't gotten 2 yet. Since the event offers only two and not all four Snowflakes as rewards, I would think this means that the priority is only in getting the first two, so we can breed for the rest after the event.

That's a tough one. I think only Backflip knows at this point.
If we go off purely what we know, you will definitely not be able to breed them. They're listed as limited in the Dragonarium, and their normal combo is any Snowflake + any Snowflake. Once that expires, you're only left with the cloning option, and you can't do that without already having at least one 3 or 4.
However I think there's a reasonable chance that BFS will make an exception, or extend the time you have to breed them. Many people are only just getting their Snowflakes now, and I feel it would be unfair to them otherwise.
At the very least you'll have the BeB extension that is as good as confirmed on Facebook. koala to you!
